Ingredients
  

Base

  • 300 gram rice short-grain

Vegetables

  • 100 gram baby spinach
  • 1 carrot medium, julienned
  • 1 zucchini medium, julienned
  • 100 gram bean sprouts
  • 1 Korean radish small, julienned
  • 200 gram mushroom shiitake or any type, sliced

Protein

  • 200 – 300 gram beef (such as ribeye or sirloin), thinly sliced (for vegetarian options, substitute with tofu or extra mushrooms)

Beef marinade

  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 garlic clove minced
  • Salt and pepper to taste

Sauce

  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 tablespoon water
  • 1 tablespoon roasted sesame seeds
  • 1 teaspoon vinegar optional for tanginess

Garnish

  • 4 eggs
  • Sesame seeds for sprinkling
  • Seaweed thinly sliced (optional)

Instructions
 

  • Rinse the rice under cold water until the water runs clear. Cook the rice according to your preference or rice cooker instructions. Typically, you'll need about 1.5 cups of water for 300g of rice.
  • Blanch spinach and bean sprouts in boiling water for 1-2 minutes, then rinse under cold water, drain, and set aside. Sauté each of the other vegetables (carrots, zucchini, radish, mushrooms) separately with a little oil, seasoning lightly with salt. Set aside.
  • Mix the beef slices with the marinade ingredients and let it sit for at least 15 minutes. Then, stir-fry the beef over medium-high heat until fully cooked. If using a vegetarian protein, prepare accordingly (tofu can be pan-fried until golden).
  • Combine all sauce ingredients in a bowl and mix well.
  • Fry each egg sunny side up or according to your preference.
  • Divide the cooked rice among four bowls. Arrange the vegetables and beef (or protein of choice) on top of the rice. Place one egg in the center of each bowl. Sprinkle with sesame seeds and seaweed if using.
  • Serve with the sauce on the side. Mix thoroughly before eating.
